Black Chick Pea
Botanical Name: Cicer arietinum

Description: Black Chick peas are available whole and have a particular savory flavor. Their cooking time varies from 30 minutes to an hour, based on variety. Chick peas can be cooked with or without salt, sautéed in garlic butter, or combined with mayonnaise and lightly cooked vegetables to make a delicious salad. They are included in many traditional recipes, including Falafel and Hummus from the middle east.

Kaala Chana:
Ingredients:
1 1/4 cup Kaala Chana, picked through and soaked overnight
1 onion chopped fine
1 bay leaf
1" cinnamon stick
1/2 tsp. turmeric powder (haldi)
5 cups of water
4 Tbsp. ghee or vegetable oil
1/4 tsp. cumin seeds (jeera)
1 tsp. ginger/garlic paste
3 roma tomatoes peeled and mashed
1 jalepeno chopped or 2 dried red chili
4 whole cloves
2 whole cardamoms
1/2 tsp. black pepper (optional)
juice of 1 key lime or ½ of a big lime
salt to taste.
For the garnish - 4 Tbsp. chopped cilantro.

Procedure:
1.Drain the water from the kaala chana. Add 3 cups of water to a heavy pot and add kaala chana, onion, bay leaf, cinnamon, turmeric, water and salt. Reduce heat and let it simmer.
2. As the dal is simmering, heat ghee in a small sauce pan and fry cumin seeds till they brown. Add the tomatoes, ginger, jalepeneo, chili, whole spices and fry the seasonings. Saute until the tomatoes are all cooked and the oil separates from them.
3. Pour the seasonings in the pot of kala chana along with black pepper and let it continue to simmer on low until the chana is soft and cooked. Adjust the water, to the consistency you like( from soup like consistency to thick soup, pour over dal or to eat with flat bread)
4. Add  lime juice. Garnish with chopped cilantro.
