Description: Orange/Split Red lentils can be cooked without soaking, although, soaking speeds the cooking process. Lentils are used to make soups, stews, bakes, sauces for pasta and salads and in India, they are made into spicy dals. They make a good replacement for minced meat in recipes.

Masoordal with Spinach Recipe:

Ingredients:

3/4 cup dried masoor dal
2 tsp. of ginger paste
½ tsp. turmeric
1 thinly sliced onion
1 tsp. cumin seeds
1/2 pack frozen chopped spinach
2 tsp. amchur (mango) powder
2 chopped roma tomato
2 Tbsp. oil
salt to taste

Procedure:

1 Wash dal and drain the water. In a heavy medium pot, cook dal with tumeric and ginger in 3 cups of water. If you are using fresh spinach, add spinach to the dal.

2 Heat oil in a sauce pan. Add onion and cumin seeds and fry for 2 minutes.

3. Add tomato simmer for 5 minuites. Add the seasonings along with amchur and frozen spinach to the dal.

4. Simmer on low until the spinach is cooked. Serve hot with flat breads or on rice..
